Why was the veil of the Temple torn asunder at the death of Christ?

The torn veil signified the end of the Old Covenant and the beginning of the New Covenant. The veil concealed the Holy of Holies from the people. Because of original sin it was very difficult to get close to God. His presence had to be covered by a veil. The veil also represents the shroud that covered jesus. When Jesus rose form the dead there was no more need for a burial shroud.

Thank you Poche. I asked this question because some people say the New Covenant came into being with the Annunciation and Incarnation.
From your response it is clear that it started where the Old one ended, that is from the death of Our Lord
