Yes, Saint Mathew is the Human/Angel; Mark is depicted as the Lion ; Luke the Ox and John the Eagle all of them with or without wings.
The choice of the symbol is to be found in the way each Evangelist starts his version of the Bible.

It was Saint Ambrose who said it.
The story goes that when Saint Augustine arrived in Milan in 387 A.D. he noted that the Christians did not fast on Saturdays as was the practice in Rome. He sought the opinion of Saint Ambrose, then Bishop of Milan, who answered him thus: "When I am at Rome, I fast on a Saturday; when I am at Milan, I do not. Follow the custom of the Church where you are."
The comment was changed around a bit, eventually it became "When in Rome, do as the Romans do."

I do not quite remember which Saint but I have read of this saint who was a "slow learner". It took him time to understand so he used to pray so that only what he had managed to master would feature in the exams.
I hope I remember; over to you Shin?, Martin? anyone?
